Bring 1½ cups basmati rice, 2¼ cups water, and ¼ tsp kosher salt to a boil. Cover, turn the heat to low, and cook until tender. Keep covered off the heat. 2. Heat 2 tbsp vegetable oil in a large pot over medium heat. Cook 1 yellow onion until soft, then stir in 3 cloves garlic, 1 tbsp fresh ginger, 1 tbsp curry powder, and ½ tsp ground turmeric for 1 minute. 3.
