Serve with crusty bread or over rice. ## Ingredients - 3 tbsp extra-virgin olive oil - 1 yellow onion, diced - 5 cloves garlic, thinly sliced - ½ tsp red pepper flakes - 2 tbsp tomato paste - 1 can diced tomatoes, 14.5 oz can - 2 cans cannellini beans, 15 oz cans, drained and rinsed - 1 cup vegetable broth - 1 tsp kosher salt - 1 bunch lacinato kale, stems removed, leaves chopped - ½ lemon ## Steps 1. Heat 2 tbsp extra-virgin olive oil in a wide pot over medium heat. Cook 1 yellow onion until soft, then add 5 cloves garlic and ½ tsp red pepper flakes and cook until the garlic is golden. 2. Stir in 2 tbsp tomato paste for 1 minute, then add 1 can diced tomatoes, 2 cans cannellini beans, 1 cup vegetable broth, and 1 tsp kosher salt. Simmer until slightly thickened. 3. Mash a few beans with the back of a spoon. Stir in 1 bunch lacinato kale, cover, and cook until tender. 4.
