Weeknight Beef Tacos
Seasoned ground beef from scratch (no packet), crunchy cabbage, cheddar, and salsa. A 25-minute family taco night.
Ingredients
- 1 tbsp vegetable oil
- 1 yellow onion finely diced
- 1 lb lean ground beef
- 2 cloves garlic minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp dried oregano
- 2 tbsp tomato paste
- 1 tsp kosher salt
- ½ cup water
- 8 corn tortillas
- 2 cups shredded cabbage
- 1 cup shredded cheddar
- ½ cup salsa
- 1 lime cut into wedges
Steps
Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Cook 1 yellow onion until soft.
Add 1 lb lean ground beef and cook, breaking it up, until no pink remains. Spoon off excess fat.
Stir in 2 cloves garlic, 1 tbsp chili powder, 1 tsp ground cumin, 1 tsp dried oregano, 2 tbsp tomato paste, and 1 tsp kosher salt for 1 minute, then add ½ cup water and simmer until saucy.
Warm 8 corn tortillas. Fill with beef and top with 2 cups shredded cabbage, 1 cup shredded cheddar, ½ cup salsa, and a squeeze of 1 lime.
